SEAFOOD PAELLA WITH PORK

Cooking time: 30 minutes
Yields: serves 6
2 tbsp cooking oil
1/2 lb lean pork cut into small pieces
2 pcs large chorizo, cut into small pieces
1/2 lb calamari, cleaned and cut into small pieces
1 lb mussels, meat only, cleaned
10 pcs large shrimp ( I used cooked shrimp)
1 large onion, peeled and chopped
5 cloves garlic, pressed
1 cup regular long grain rice
1/4 cup white wine
1 tbsp paprika
1 large can (14.5 oz) crushed tomatoes
a pinch of saffron threads
2 cups broth
1 bag (10 oz) frozen peas
salt and pepper
lemon wedges
Pre heat oil
Add pork and chorizo
Season with salt and pepper.
Cook it for 3 minutes until brown.
Set aside.
use the oil from the sausage then add calamari.
Turn off heat and remove calamari and transfer into a plate.
Meanwhile add oil to the pan and cook the mussels.
Season with salt and pepper.
Cook mussels for a minute over high heat.
Turn off heat and transfer to a plate.
Add shrimp.
If using raw and shelled shrimp, season with salt and pepper .
Cook for 2 minutes or longer until cooked an opaque in color.
Transfer to a plate.
Clean pan with paper towels.
Add oil and saute onions and garlic for 2 minutes.
Add bell pepper and cook for 1 minute.
Add rice and stir to coat the grains with oil.
Add tomatoes, stir and cook for a minute.
Add wine if using.
Add paprika
Add saffron
Add broth
Reduce heat to medium and add broth.
Cook for 3 minutes until it boils.
then cover.
After 3 minutes remove lid.
Allow liquid to evaporate – as you cook it for 5 minutes.
After 5 minutes and liquid is almost gone add peas.
Add cooked seafood and pork.
Cover, turn off heat.
Allow the carryover cooking to fully cook the rice.
Leave it for 5 minutes.
Serve with lemon wedges.
