JUMBO SAUSAGE PESTO SANDWICH AND COLESLAW
Prep time: 20 minutes
Cooking time: 6 minutes
Serves: 2
COLESLAW
3 cups shredded green cabbage
1/2 cup shredded carrots
3/4 cup (adjusted) real mayonnaise
1 1/2 tbsp (adjusted) sugar
2 tbsp (adjusted) vinegar
salt and pepper
2 tbsp water (adjusted)
Combine all ingredients except the cabbage.
whisk well and taste.
Add cabbage and keep in the refrigerator for 30 minutes to chill.
Meanwhile – cut sausages in half
Coat pan with cooking spray
Grill sausages both sides until well charred.
I used a large Ciabatta bread that I cut in half.
Pre heat cooking pan and add 3 tbsp cooking oil
Pan toast the each half of the bread for about 1 1/2 minutes (total) both sides until toasted.
You can smear melted butter and season it with salt and pepper when you are ready to prepare the sandwich.
To arrange:
Place 6 pcs of halved sausages on top of one half of the sandiwch.
Spoon a good portion of coleslaw on top
Add shredded mozarella cheese
Add pickled jalapeno on top
and top it with the other toasted bread.
Cut in half and serve fresh.
