SARDINAS CREAM PASTA
Cooking time: 20 minutes (including the pasta)
Yields: Serves 4 to 6
12 oz canned sardines in oil
3 tbsp olive oil
1 cup bread crumbs
1 tsp or more garlic powder
salt and pepper
2 tbsp butter
2 to 4 tbsp lemon juice
1/2 cup stock
1/2 cup milk or heavy cream
2 cups fresh basil leaves
grated parmesan cheese
Pre heat oil then toast crumbs with salt and pepper.
Toast for a minute until brown then transfer to a bowl.
Meanwhile – add sardinas in the pan
Use fork to flake the flesh of the sardines
Turn on heat and cook for a minute.
Add butter and reduce heat to medium.
Add 1 tsp ground pepepr
Add lemon juice
add stock or clam juice and cream
simmer for 2 minutes over medium heat.
Add basil leaves.
Press leaves into the broth to wither.
Add green peas – turn off heat after 1 minute.
Add cooked noodles and combine gently.
Add bread crumbs and gently combine.
Turn off heat.
Serve with grated cheese.
