SARCIADONG TILAPIA WITH TAUSI (FERMENTED BLACK BEANS)
Prep time: 20 minutes
Cooking time: 12 minutes
Yields: 2 servings with steamed rice
1 lb (2 pcs) tilapia fillets
½ cup cornstarch
salt and pepper
¼ cup cooking oil
1 large yellow onion, peeled and chopped
2 medium size Roma tomatoes, chopped
3 cloves garlic, minced
1 small can (1/2 cup) fermented black beans (drained from brine and rinsed with cold water)
½ cup water/fish stock
mayonnaise
Season fish with salt and pepper and dredge into cornstarch.
Pre heat oil for a minute or until hot enough to fry fish.
Fry fish fillets for 4 minutes turning once.
Remove from pan and transfer to a plate.
Meanwhile, using the same pan, remove some of the oil leaving enough to sauté
Onions and tomatoes for 3 minutes.
Stir until soft and mushy.
Add garlic and cook for 30 seconds.
Add black beans.
Saute for 2 minutes.
Add broth. Cook for a minute.
To serve, smear a small dollop of mayonnaise on top of the fish.
Then divide toppings into fish.
Serve with steamed rice.
