SALT AND PEPPER PORK

Cooking time: 10 minutes
Yields: serves 4 with steamed rice
1 lb boneless pork/porkchop
1 tbsp cornstarch
garlic salt and pepper
1 cup cooking oil
1 large (8 oz) red onion, peeled and diced
10 cloves garlic, minced
2 tbsp grated ginger (optional)
2 to 4 pcs jalapeno pepper, seeded and sliced thinly
1 tbsp garlic salt
1 tbsp ground pepper
Coat pork with cornstarch and season with garlic salt and pepper.
Meanwhile, pre heat oil at 350 F.
Fry pork between 8 to 10 minutes or until brown and cooked.
Regulate/adjust heat between medium to high.
Do not burn pork.
Remove pork and place in a plate lined with papertowels to remove excess oil.
Remove all cooking oil but 2 tbsp from the pan.
cook onions and ginger (if using) for 30 seconds.
Add garlic and jalapeno
Stir.
Add pork back.
Add garlic salt and pepper.
Continue to combine in the pan for a minute.
remove from the pan and serve.
