Prep time: 10 minutes
Cooking time: 50 minutes
Yields: 9×12 inch baking tray
3 eggs, beaten
4 tbsp melted butter
1 tbsp vanilla extract
1 1/2 cans coconut milk
1 can condensed
2 cups glutinous rice flour
1/2 cup grated cheddar cheese
Pre heat oven to 300 F. Set oven rack to the middle.
Combine eggs, butter,vanilla and salt.
Start whisking coconut milk and condensed milk.
Sift flour and slowly add into the wet batter.
Keep whisking until smooth.
Meanwhile grease a 9 X 12 inch bake ware with cooking spray.
Pour batter into the baking pan.
Bake for 30 minutes.
adjust oven temperature to 350 F.
Bake for another 20 minutes.
Pull out and add cheese on top.
Broil on high for 2 minutes until top is brown and bubbly.
Cool down before serving.
