ROASTED GARLIC AND PORK LARDON PASTA IN CARBONARA SAUCE
Prep time: 20 minutes
Cooking time: 20 minutes
Yields: 8 servings as main dish
10 oz spaghetti, cooked according to the package instructions.
1 cup pasta water (divided into 2)
4 tbsp olive oil
1 ½ lb lean pork diced small
2 roasted garlic bulbs
salt and pepper
3 large tomatoes, chopped (10 oz)
2 tbsp butter, softened
2 tsp dried oregano
5 eggs, beaten
1 cup or more grated parmesan cheese
Cook pasta according to the package instructions, set aside. Save 1 cup of pasta water.
Cook pork with the oil for 7 minutes or longer until brown.
Season with salt and pepper.
Meanwhile, squeeze garlic meat out of the garlic bulb. Mash garlic.
Add to the pan.
Add tomatoes.
Add ½ cup pasta water.
Add butter, stir.
Add pasta and season with salt and pepper. Add oregano. combine well.
Meanwhile, whisk eggs in a bowl.
Add ½ cup pasta water.
Slowly add pasta.
Combine well.
Add cheese.
Serve right away.
