PAN FRIED SALMON AND PAN STEAMED BROCCOLI
Prep time: 10 minutes
Cooking time: 10 minutes or less
Yields: 3 servings
3 pcs (8 oz) salmon fillets ( I used wild caught sockeye salmon)
4 tbsp olive oil
5 cloves garlic, minced
12 oz broccoli florets
2 tbsp butter
2 tbsp lemon juice
salt and pepper
Pre heat a non stick pan then coat with cooking spray.
Season fish with salt and pepper.
Lay salmon fillets skin side on and fry for 3 minutes.
Turn over and fry the other side for 2 minutes.
Remove from the pan and set aside.
Add olive oil to the pan and pre heat for a minute.
Add garlic and broccoli.
Cover, adjust heat to low and pan steam for 2 minutes.
Uncover – add lemon juice, butter and salt and pepper.
Cover and turn off heat.
Allow butter to melt.
Combine before serving with salmon.
