BIBINGKANG KANIN WITH MACAPUNO
(Rice Cake with caramel and macapuno)
Prep time: 10 minutes
Cooking time: 45 minutes
Yields: 9 servings as snack
4 cups sweet rice
4 cups water
2 ½ cans coconut milk (14.5 oz each can)
pinch of salt
2 cups brown sugar (added to the rice)
2 tbsp vanilla extract
2 cups sugar for the caramel
1 can coconut milk for the caramel
1 jar macapuno strings
Wash rice.
Add water, coconut milk and salt
Cook using medium heat for 18 minutes. Stir constantly.
Add sugar and cook for 3 minutes using low heat.
Place in a baking dish.
Spread macapuno string on top and set aside.
Meanwhile, melt brown sugar in a pan.
Keep stirring for 5 minutes using medium heat.
Add coconut milk and keep stirring until it turned into caramel stage about 8 minutes.
Immediately pour caramel into rice cake.
Cool down completely until caramel becomes sticky.
Slice and serve.
