MOCHA BUKO PANDAN
Prep time: 30 minutes
Cooking time: 10 minutes
Serves: 10 servings
ingredients:
1 cup buko juice
sugar
1 can coconut milk
Salt
1 can condensed milk
1 cup hot water
1 tsp instant coffee
1 can evaporated milk
1 tbsp cocoa powder
5 tbsp gelatin powder
Grated young coconut
1 can green canned gulaman, chopped
1 container cool whip
Combine juice and coconut milk with sugar (if desired)
Add pandan leaves and a pinch of salt
Add 1/2 can condensed milk.
Bring to boll (5 minutes)
Add gelatin powder (3 tbsp) and dissolve.
Strain.
Remove Pandan leaves.
Chill in the refrigerator to set.
Meanwhile –
Dissolve 1 cup hot water with coffee,cocoa powder with milk and sugar.
Add to the pan and bring to boil.
Add 2 tbsp gelatin powder to dissolve.
Strain.
Chill in the fridge to set.
When set, cut into cubes.
Combine both mocha and buko gelatin in.a bowl and add young coconut
Add remaining condensed milk
Add gulaman
Add cool whip
Combine well.
Chill in the refrigerator before serving.
