GRILLED SALMON AND VEGETABLES (MEDITTERENEAN DIET)

Cooking time:15 minutes
Yields: serves 4
1/2 cup olive oil
salt and pepper
1 tbsp sweet paprika
5 cloves garlic, minced
4 tbsp lemon juice
Whisk all ingredients together and brush fish and vegetables while grilling.
1 lb salmon, fillet, cut into large piece
1 large zucchini, cut into large cubes
1 large onion, cut into 8 wedges
12 cherry tomatoes, washed
12 pcs asparagus, ends removed
1 package (8 oz) white button mushrooms
Skewer salmon fillets for easy grilling.
Coat a pre heated grill pan with cooking spray
Grill fish for 8 minutes turning once.
Grill vegetables for 3 minutes except tomatoes (2 minutes only)
Brush fish and vegetables with sauce as you grill it.
