CRISPY SNAPPER IN MISO
Prep time: 20 minutes
Cooking time: 10 to 12 minutes
yields: 2 large pieces of snapper
1 lb red snapper cut into 2 pcs
1/2 cup all purpose flour
cooking oil to fry the fish
1 large onion, peeled and chopped
1 large tomato, chopped
5 cloves garlic, minced
ground pepper
1 1/2 cups water
1/2 cup korean white miso
1 bunch mustard greens, washed and cut into large pieces.
Fry the fish for 6 minutes until brown turning occasionally.
Remove from oil and set aside.
Meanwhile saute the aromatics – onions, tomatoes and ginger.
Cook for 5 minutes until soft, wilted and fragrant.
Add garlic and ground pepper and saute for 30 seconds.
Add 1 1/2 cups water and adjust the heat to medium.
Add 1/2 cup miso paste (I used korean white miso paste)
Mash and dissolve the paste with water.
Simmer for a minute.
Add mustard greens
Add fish.
Press mustard greens into simmering broth.
Add back the fried fish.
Cover and cook for 2 minutes.
Serve with steamed rice.
