MACARONI AND CHICKEN SALAD

CREAMY CHICKEN MACARONI SALAD

Prep time: 30 minutes
Cooking time: 25 minutes
Yields: 30 to 40 servings

1 package (32 oz) macaroni noodles, cooked according to package instructions
3 ½ lbs. boneless, skinless chicken breasts
2 small bottles of Lady’s Choice Sandwich Spread (video showed that I used 1 bottle only but I added another small bottle for more flavor.)
1cup mayonnaise, (video showed ½ cup only but I added another ½ cup for more flavor)
1 package (16 oz) cooked ham, diced small
2 to 3 cups raisins (video showed 1 cup only)
2 small cans of crushed pineapple including the juice
2 cups small diced celery
You can add diced carrots if you want
1 small can Nestle or Table cream – This is the secret!

Boil chicken for 25 minutes or longer until cooked.
Remove from the wok, cool down and shred. Set aside.
Combine the following ingredients in a large bowl and mix well; Lady’s Choice, mayonnaise, ham, raisins, pineapple, celery, carrots if using. Add salt and pepper. Please be generous with salt and pepper.
When you combine all the ingredients, please use a large mixing bowl and combine ingredients in stages to make sure all the noodles are coated with cream.
Place 1/3 pasta in a mixing bowl. Add a fraction of the cream and add the crushed pineapple. Taste and adjust. Season with salt and pepper.
Add the 2/3 part of the macaroni and then add another fraction of the table cream.
Taste, adjust and season with salt and pepper.
Add celery and ham mixture plus a portion of the shredded boiled chicken.
Combine well. Taste and adjust with salt and pepper.
Repeat the process until all ingredients are combined.
Feel free to add more Lady’s Choice Sandwich Spread or/and mayo if desired.
