Yields: 6 cupcakes
1 cup all purpose flour
1 tbsp baking powder
1/2 tsp baking soda
a pinch of salt
3/4 cup sugar
4 oz or 1/2 stick softened unsalted butter
2 eggs, beaten
1 cup coconut strings or macapuno (sweetened) I used the store bought in a jar.
8 oz softened cream cheese
2 tbsp sugar
Pre heat oven to 350 F.
Meanwhile sift and combine the following:
Flour, baking powder, baking soda, sugar and salt.
Then add butter and eggs.
Scoop into pre coated cupcake holders (Pre coated with cooking spray)
Bake at the center of the oven between 15 minutes to 20 minutes.
Cool down before applying the frosting.
Whisk cream cheese until smooth (2 minutes)
Add sugar and whisk for another minute.
Place cream in a piping bag with a desired tip.
Pipe the cream on top of the cupcakes.
