LECHON BICOL EXPRESS
Prep time: 20 minutes
Cooking time: 45 minuutes (including cooking the pork belly)
Serves: 4 to 6 with steamed rice
2 lbs pork belly, chopped
4 tbsp cooking oil
1 medium size yellow onion, peeled and chopped
2 knobs ginger,peeled and chopped
5 cloves garlic, minced
at least 2 tbsp shrimp paste or bagoong
1 can coconut milk
Chili sweet peppers/labuyo/bananapeppers – depending on how spicy you want your dish
chopped green onions or cilantro just for color. (optional)
Pre heat oil for a minute then saute onions and ginger for 3 minutes.
Add garlic and cook for 30 seconds. Add shrimp paste and cook for a minute before adding the pork.
Add bagoong and stir.
Add coconut milk.
Bring to a boil and allow to cook for 3 minutes.
Reduce heat to medium and add peppers.
Allow to simmer for 2 minutes until sauce has thickened.
Add chopped greens if using.
Serve with steamed rice.
