RECIPE BELOW IS FOR A BIGGER BATCH THAN THE COOKING VIDEO – Hello everyone.. I noticed that the taste of Chinese Kikiam or sausage is almost the same with our Beef Pares. I have a few beef cubes in the freezer (left over from a dish I made earlier). I thawed it and decided to add kikiam to make it at least to a bowl of beef enough to serve for 2 with steamed rice of course. I hope you enjoy it. Thanks.
BEEF PARES WITH KIKIAM (CHINESE SAUSAGE)
Prep time: 20 minutes
Cooking time: 45 minutes to 1 hour
Serves: 6 with steamed rice
2 lbs beef chuck cut into large pieces
4 cups water or broth
5 pcs dried star anise
1 cup oyster sauce
1 tbsp ground pepper
4 tbsp cooking oil
5 cloves garlic, minced
1 large red onion, peeled and chopped
1 package (10 pcs) Chinese Sausage, casings removed and sliced thinly
1 cup chopped green onions for garnish
In a stock pot – Combine beef, with water,star anise, oyster sauce and ground pepper.
Cover and boil until tender.
Meanwhile – pre heat cooking oil in a large saute pan.
Saute onions and garlic for 3 minutes.
Add back cooked beef and combine well.
Add water or stock more if needed to make some gravy.
Simmer until thick.
Add chopped green onions and turn off heat.
Serve with steamed rice.
