10 MINUTE QUICK ESPASOL
Prep time: 10 minutes
Cooking time: 10 minutes
Yields: 8 pcs (snack for 2 people)
1 1/4 cup glutinous rice flour
1 cup coconut milk
3/4 cup brown sugar
Spread flour thinly in a baking tray lined with parchment paper.
Broil on high between 5 to 10 minutes depending on how toasted and how nutty you want the flour to be.
Please watch it as it easily burns. ( I had my share of experience during my testing)
Allow to cool down and transfer to a bowl.
Meanwhile bring the coconut milk to a boil (2 minutes or less)
Add sugar and stir until dissolved about a minute.
Then stir in flour.
Keep stirring until it all comes together and form into a ball and the bottom of the pan is clean from the sticky flour.
Transfer to a dish,flatten using a spoon and cool down completely.
Spread a small portion of the leftover toasted flour on a clean surface
Coat the dough with flour and flatten it.
Cut or slice according to your desired measurement. I cut mine into 8 pcs evenly.
Coat unexposed portions of the espasol with more toasted flour.
Serve with coffee.
