HOW TO MAKE SAPIN SAPIN

SAPIN SAPIN (STEAMED SWEET GLUTINOUS RICE CAKES WITH COCONUT CURD)

2 cups glutinous rice flour
1 cup sugar ( I only used 3/4 cup, i prefer mine to be less sweet)
pinch of sugar

1 can coconut milk
Whisk all ingredients until smooth.
Divide into 3 if using flavors
Add flavoring and whisk until color appears.
Coat 6 inch diameter cake pan with cooking spray.
Pour white batter first, cover with kitchen cloth and steam for 10 minutes.
Do the process for the remaining two flavors.
Cool down completely before inverting into a plate.
Spread coconut oil and curd on top before serving.

Flavoring
1 tsp Vanilla extract

1/2 tsp ube extract
3 drops of orange food color

Coconut curd
Pour 1 can coconut milk into a pan.
Keep stirring until becomes curd and oil appears.
This process takes about 30 minutes.
