COFFEE RICE CAKES (PUTO)
Prep time: 5 minutes
Cooking time: 8 minutes per batch
Yields: 10 rice cakes
2 cups water
1 tbsp instant coffee
1 cup brown sugar
2 cups rice flour
1 1/2 tbsp baking powder
a pinch of salt
1 tbsp vanilla extract
Combine water, coffee, brown sugar and vanilla. (A)
Combine flour,baking powder, salt (B)
Combine A and B.
Coat molders with cooking spray or melted butter
Fill molders with batter up to 3/4 full.
Bring a wok of water to a boil.
Place steamer basket into the wok.
Cover and steam for 8 minutes.
Cool down, brush with melted butter and sprinkle cheese.
Serve
