Grilled Mackerel
(You can use any fish or Crustacean that you prefer)
Prep time: 5 minutes
Grilling time: 8 minutes
Yields: 1 large mackerel (1/2 pound)
1 tbsp yellow curry powder
1 tsp chili powder
salt and pepper
2 tbsp olive oil
1/2 pound Mackerel, gutted, cleaned
1 tsp grated ginger
1 tsp lime zest
1 tsp lemon zest
1 tbsp fish sauce
1 clove garlic, minced
1 tbsp honey
4 tbsp olive oil (not 2 tbsp like what i said in my video)
salt and pepper
Combine curry, chili powder, salt and pepper with the olive oil in a bowl and make a paste.
Score mackerel and brush it with curry paste.
Grill skin side down first for 5 minutes.
Turn over and grill the other side for 3 minutes. Baste fish with curry paste while grilling.
Remove from the grill and serve with the sauce.
Sauce
Combine ginger, zest, garlic, honey, oil and season with salt and pepper.
