GRILLED CHICKEN AND PESTO SAUCE

They say garlic is good in fighting covd. Actually in the past I would swallow one clove of fresh garlic whenever i have a sore throat or not feeling well and before I know it.. it magically fades. I believe in the power and health benefits of garlic.. and olive oil and of course you can’t go wrong with fresh herbs! Enjoy..

CHICKEN PESTO PASTA
Here’s the story about the grilling part – I had it recorded – But I decided to make it another video since the grilling part has another story to it.. But basically – I just seasoned 2 1/2 lbs of chicken with salt and pepper and olive oil. These are thinly cut chicken breasts from Costco. I grilled it for 5 to 7 minutes in my balcony and had it rested before I sliced it.

To make the PESTO
1/2 cup olive oil
1 good handful of fresh basil leaves
1/2 cup grated parmesan cheese
4 cloves garlic
salt and pepper

Run in a blender or food processor until smooth.
