GINATANG TOSTADO MALAGKIT AT MAIS/GINATANG MAIS

Cooking time: 18 minutes
Yields: serves 6
1 cup sweet rice (divided into 2)
2 cans coconut milk
2 cups water
1/2 teaspoon salt
1/2 cup sugar
pandan leaves (optional)
1 tbsp vanilla extract
1 can “Cream Style” Sweet corn
Toast 1/2 cup of sweet rice for 3 minutes over high heat until smoking, fragrant and slightly brown in color.
Add the remaining half of the rice, add water, 1 can of coconut milk, sugar, pandan leaves, salt and vanilla extract.
Cook over high heat and stirring occasionally for 10 minutes.
Add the other can of coconut milk and reduce heat to medium.
Stir and cook for 3 minutes.
Reduce heat to low and cook for another 2 minutes.
Turn off heat and add corn.
Combine well.
Server room temperature.
