GINATAANG LANGKA WITH FRIED MACKEREL (GREEN JACKFRUIT IN COCONUT MILK)

GINATAANG LANGKA WITH CRISPY MACKEREL/GREEN JACK FRUIT WITH CRISPY MACKEREL.

Prep time: 20 minutes
Cooking time: 15 minutes

Yields: serves 2 with steamed rice

4 tbsp cooking oil
1 large onion, peeled and chopped
2 oz ginger, peeled and sliced thinly or chopped
5 cloves garlic, minced
1 tbsp shrimp paste or bagoong.
1 can coconut milk

a pinch of sugar
1/2 tsp salt
1 lb “meat” or “flesh” of fried mackerel.
5 pcs Shishito peppers – if no shishito peppers please use 2 BANANA PEPPERS – sliced in angle and
thinly.
1 can green jackfruit in brine, (brine removed and jack fruit pcs are sliced into smaller bite size pieces.)

1/2 cup water
2 tbsp chopped green onions

Cooking procedure:

Pre heat oil then add onions and ginger and cook for 3 minutes.
Add garlic and cook for 30 seconds.
Then add shrimp paste and coconut milk.
Cook until coconut milk has reduced.
Add a pinch of sugar and salt too.
Cook for 5 minutes until sauce has thickened.
Add jackfruit and mackerel flesh or meat.
Stir. Adjust heat to medium to high.
Add water and allow to cook for 30 seconds.
Then add banana peppers and green onions.

Cook for a minute then turn off heat.
Serve with steamed rice.
