GENERAL TSO CHICKEN AND TOFU
Prep time: 20 minutes
Cooking time: 15 minutes
Yields: Serves 2 with steamed rice
6 tbsp cornstarch (divide 4 tbsp and 2 tbsp)
1 package, extra firm tofu, drained and cut into large cubes (32 pcs)
1/2 lb boneless, skinless chicken breast, cut into the same size as the tofu
Salt and pepper
Cooking oil
2 oz ginger, peeled and sliced thinly
5 cloves garlic, minced
2 tbsp sesame oil
1/4 cup low sodium soy sauce (KIKKOMAN)
4 tbsp Hoisin sauce
1/2 cup water
2 tbsp brown sugar
1 cup green onions
Toasted white sesame seeds
Combine 4 tbsp cornstarch, salt and pepper in a bowl.
Add tofu and coat.
Remove
Add chicken and coat.
Remove
Meanwhile- pre heat at least 2 cups of cooking oil to 350 F.
Slowly deep fry tofu until golden and crispy.
Takes 5 minutes.
Cook in batches.
Do the same with chicken.
Set aside.
Remove all the oil and leave 2 tbsp.
Saute ginger for 30 seconds.
Add garlic and cook for 30 seconds.
Add sesame oil.
Add soy sauce, water, brown sugar and hoisin sauce.
Cook for a minute under medium heat until simmering.
Slowly add back tofu and chicken.
Coat slowly with the sauce.
Add green onions and combine gently.
Sprinkle white sesame seeds.
Serve
