UBE FRENCH TOAST WITH STRAWBERRIES AND PECANS
Prep time: 20 minutes
Cooking time: 10 minutes
4 tbsp softened butter
1/2 cup milk plus 1 cup later
6 pcs ciabatta bread (1 to 1 1/2 inch thick)
fresh milk (can use evaporated milk)
a dash of salt,cinnamon,nutmeg
1 tsp vanilla extract
2 tbsp olive oil
a few drops of ube extract
1/2 tsp cornstarch
Fresh strawberries, sliced
1 cup toasted pecans (whole)
Whisk 3 eggs and add milk
Add salt, vanilla, cinnamon and nutmeg
Whisk well and soak bread for a minute to 1 1/2 minutes.
Remove and set aside.
Meanwhile, melt butter and add oil
Fry bread (a minute each side or until desired “browness” is achieved.
remove and set aside.
Let’s make the sauce
Add another 1 cup of milk into the left over batter.
Add ube flavor
Whisk in cornstarch
Add to the pan and keep whisking until slightly thick and eggs are cooked – over low to medium heat.
Cool down sauce before plating.
To plate –
Drizzle sauce at the base of the of the plate.
Add 2 pcs of french toast after.
Drizzle condensed milk
Serve with fresh strawberries and/or toasted pecans.
