Serves: 4
2 lbs cod (BAKALAW) cut into 3 bite size pieces (you can use any kind of fish fillet you want)
1 cup all purpose flour
1 tsp salt
1 tsp ground pepper
1 cup 7-up
1 egg
2 cup vegetable oil for frying
1 large red onion, peeled and sliced thinly into rings
10 cloves garlic, minced
Juice of 1 lemon
1/4 cup soy sauce
1/4 cup water
(note if you want more sauce, increase the portions of the soy sauce and water)
1 tbsp butter
BATTER:
Combine flour,salt and pepper,7-up and egg. Whisk until becomes smooth.
Cut fish into desired size.
Dip fish into the batter.
Pre heat oil to 365F
then fry fish until golden brown.
Remove and place into a plate lined with paper towels.
Cook in batches.
Meanwhile – use some of the frying oil for cooking the sauce.
In a medium skillet – pre heat oil then add garlic and half of the onions.
Stir and cook for 30 seconds.
Combine lemon juice, soy and water in a bowl and add to the onions and garlic in the pan.
Simmer for a minute over low heat.
Add butter for silkiness to the pan and allow to melt.
Add cooked fish into the pan.
Turn off heat.
Serve right away with steamed rice.
