EASY PANCIT PALABOK
Note: In the video i showed how to make the classic way and the easy way to make caldo/sauce/gravy
Yields: 6 servings
2 plys PANCIT PALABOK noodles ( I used Super Q Pancit Palabok brand)
4 cups chicken broth
1 tbsp anatto powder
2 tbsp water
2 tbsp patis/fish sauce
1 tsp ground pepper
2 tbsp cornstarch
1/2 cup water
Toppings:
3 tbsp cooking oil
1/2 lb ground pork (i only used 1/4 lb in the video as I am trying not to eat a lot of red meat)
1 lb small pre cooked peeled shrimp. (please use fresh if you can)
5 cloves garlic
1 tbsp fish sauce
1 tsp ground pepper
Other toppings:
4 hard boiled eggs, peeled and sliced
1/2 cup chopped green onions
1 cup ground chicharon
1 cup toasted tinapa flakes/ground (not in the video as I am allergic to tinapa)
Cook the noodles according to package instructions. Set noodles aside and work on the “easy sauce”
Meanwhile make the sauce by bringing the broth to a boil using a medium pot.
Dissolve anatto powder with water and add to the broth.
Bring to a boil around 5 minutes.
Add fish sauce and ground pepper.
Whisk in slurry (dissolving cornstarch and 1/2 cup water) and keep stirring until sauce is thick. Use medium heat. Turn off heat. That’s your sauce.
Meanwhile, pre heat oil for a minute.
Add ground pork and brown about 1 minute.
Add garlic and cook for 30 seconds until fragrant.
Add shrimp and cook for a minute.
Season with fish sauce and ground pepper.
To plate:
Place noodles in a serving dish.
Add sauce
Add toppings
Add hard boiled eggs, green onions, tinapa flakes if using, lemon wedges/calamansi/limes
Add chicharon.
Serve and enjoy..
