CRISPY TUNA PATTIES WITH MUSHROOM GRAVY

Yields: 6 patties
1 can (12 oz) tuna in can – drained
1/2 cup parmesan cheese
1/2 cup panko bread crumbs
3 tbsp lemon juice
3 tbsp mayonnaise
5 cloves garlic, minced
1 tsp ground pepper
1 tsp salt
Breading – 2 cups panko bread
Drain tuna well and place in a mixing bowl.
Add the rest of the ingredients under patties.
Remove as much liquid as you can.
Meanwhile – form 6 patties
Cover patties with panko bread.
Place in a tray and freeze for 15 minutes to set.
To cook – pre heat enough cooking oil in a pan.
Slowly release patties into the hot oil and allow brown.
Turn over and cook the other side.
Total frying time is 3 minutes on both sides.
4 tbsp olive oil
1 package (10 oz) sliced or halved mushrooms
4 tbsp lemon juice
4 tbsp softened butter
3 tbsp all purpose flour
1/4 cup good brand of soy sauce
1 1/2 cups to 2 cups broth
salt and pepper
1 tbsp sugar
Pre heat oil for a minute
Add mushrooms and cook for 3 minutes
Add butter and dissolve.
Add lemon juice.
Add flour and cook for 30 seconds.
Add soy sauce and broth.
Season with salt,pepper and sugar.
Continue to simmer for 3 minutes until thickened.
Turn off heat and serve with tuna patties.
