PORK MENUDO IN FRESH TOMATOES

Cook time: 45 minutes
Marinate: 30 minutes
Serving: 20 people
For marinade:
8 tbsp soysauce
8 pcs calamansi
Ingredients:
6 tbsp cooking oil
6 cloves garlic minced
2 medium size onion, peeled, chopped
2 kilos pork kasim cubed (pork belly)
3 tbsp fish sauce
18 pcs medium size tomatoes chopped
1 cup raisins
4 tbsp liver spread
4 medium sized potatoes, peeled and cubed
2 big carrots, peeled and cubed
1 cup kinchay, chopped
5 medium sized bell pepper, cored, seeded and diced
Marinate pork in calamansi juice and soysauce for 30 minutes.
Pre heat cooking oil using a large wok.
Cook garlic and onion for 2 minutes.
Add marinated pork, tomatoes and fish sauce.
Cover.
Cook for 30 min or until meat is tender.
Uncover.
Put the raisins, liver spread, potatoes, carrots and liver.
Cover.
Simmer for 10 minutes over medium heat.
(You can add more tomatoes or water if the sauce is too thick).
Uncover.
Put kinchay and bell pepper.
Cover.
Simmer for 2 minutes over low heat.
Serve with steamed rice.
