CHICKEN WITH BROCCOLI
Prep time: 30 minutes
Cooking time:
1/2 cup cornstarch
salt and pepper
1 1/4 skinless and boneless chicken thighs – cut into small pieces
2 cups cooking oil
1 large onion, peeled and chopped
1 large tomatoes, chopped
6 cloves garlic, minced
3 tbsp soy sauce
3 tbsp hoisin sauce
3 tbsp oyster sauce
3 tbsp sesame oil
2 tbsp lemon or lime juice
optional – Xio Xing cooking wine – 2 tbsp
1/2 can tausi – rinsed about 4 oz
1/2 cup chopped green onions or cilantro
1 1/4 broccoli, cut into small pieces
Blanch broccoli (boiling water and lime juice) for 2 minutes.
Then submerge in cold water to stop the cooking process.
Drain and set aside.
Meanwhile,
Combine cornstarch and chicken and season with salt and pepper.
Pre heat cooking oil and fry chicken.
Set aside/
Remove all the oil but leave 2 tbsp.
saute your onions and tomatoes for 3 minutes.
then add garlic.
Cook for 30 seconds
Add soy sauce, hoisin,oyster, sesame oil, juice and tausi.
Keep cooking until it boils.
Add Chicken back and combine well.
Add chopped green onions.
then add broccoli.
Combine well and serve.
