“KETO DIET” CHICKEN CALDERETA
A keto diet is well known for being a low carb diet, where the body produces ketones in the liver to be used as energy. It’s referred to as many different names – ketogenic diet, low carb diet, low carb high fat (LCHF), etc. When you eat something high in carbs, your body will produce glucose and insulin.Prep time: 15 minutes
Cooking time: 25 minutes
Yields: 4 servings without rice4 tbsp cooking oil
2 pounds boneless, skinless chicken thighs cut into large pieces
1/2 tsp red pepper flakes
1 large yellow onion, peeled and cut into large pieces
5 cloves garlic, minced
5 tbsp soy sauce
2 tbsp fish sauce
2 tbsp liver spread
1 small can tomato sauce
5 pcs dried bay leaves
1 cup chicken broth
ground pepper
3 large Filipino hotdogs cut into large pieces
2 large zucchinis, cut into large pieces
1 medium size bell pepper, seeded and cut into thin stripsPre heat oil for 2 minutes in a large dutch oven.
Add chicken and pepper flakes and cook for 3 minutes using high heat, stirring occasionally.
Add onion and cook for 3 minutes.
Add garlic and cook for 30 seconds.
Adjust heat to medium and add the following – tomato sauce, broth, liver spread, bay leaves, soy sauce, fish sauce
Cover and cook for 10 minutes.
Uncover and add hot dogs, bell peppers and zucchini.
Cover and cook for 5 minutes.
Turn off stove and let the carry over cooking cook the zucchini.
Serve hot.
