RECIPE CHICKEN ADOBO
Inspired by Fiesta Filipina’s chicken Adobo by Chef Ado and Abel
Prep time: 10 minutes
Cooking time: 30 minutes
Yields: 2 servings with steamed rice
4 tbsp cooking oil
1 medium size onion, peeled and chopped
1 ½ lb chicken wings/drumettes
5 cloves garlic, minced
1 tbsp annatto powder
4 tbsp soy sauce
3 tbsp palm vinegar
2 tbsp hoisin sauce
4 dried bay leaves
1 tsp ground pepper
1 cup water
Saute onions for 3 minutes.
Add chicken and cook for 3 minutes until a little brown and blood is removed.
Add garlic and cook for 30 seconds.
Add annatto powder
Add soy, vinegar, hoisin, ground pepper, bay leaves.
Add water.
Bring to a boil about 1 minute.
Cover and adjust heat to medium.
Continue to cook between 10 to 15 minutes depending on how large the chicken pieces are or what part of chicken you are using.
Remove from heat.
Serve with steamed rice.
Enjoy.
