How to make Caramelized Pork Belly
(Vietnamese Inspired Dish)
Prep time: 5 minutes
Cooking time: 30 minutes
Yields: 2 to 3 servings with steamed bokchoy
1 pound pork belly cut into large pieces
3 tbsp fish sauce
3 tbsp soy sauce (dark) plus 2 tbsp later for the sauce
1 tsp chili powder or more if you want it spicy
1 can coconut milk.
1 cup water
1 tbsp brown sugar
ground pepper
Combine pork, fish sauce, 3 tbsp soy, chili powder and coconut milk in a pressure cooker and pressurize for
20 minutes.
remove from the pressure cooker. Pat pork with paper towel and completely dry it out.
Coat pan with cooking spray and add pork before the pan even gets hot. (to prevent from too much
splattering)
The pork will produce its natural oil. Use that oil to caramelize all sides of the pork (total 5 minutes)
remove and set pork in a plate lined with paper towels to remove excess oil.
remove oil from the pan and reduce sauce into half (5 minutes over medium heat) – add sugar.
Drizzle sauce on top before serving.
