BOLA BOLA DE SARSA AND CREAMY BROCCOLI SOUP
Prep time: 25 minutes
Cooking time: 8 minutes (medium heat)
Yields: 8 patties
1 lb. ground meat (pork, beef, chicken, turkey)
2 tbsp olive oil
1 tsp achuete or annatto powder
3 tbsp hoisin sauce
5 cloves garlic, minced
1 tsp ground pepper
3 tbsp cornstarch
Combine all ingredients in a bowl. Divide into patties. Freeze patties for 10 minutes to set before frying.
Put enough oil in a sauté pan and pre heat for a minute.
Fry patties in batches using medium heat, between 5 to 8 minutes until inside is cooked.
Remove and set aside.
Meanwhile make the sauce
BUFFALO WING SAUCE
½ cup chicken broth
2 tbsp butter
3 tbsp hoisin sauce
6 tbsp hot sauce
½ tsp salt
Combine all ingredients in a sauce pan. Bring to a boil (about 3 minutes)
Add patties and bathe patties with the sauce.
Continue to cook until sauce is thick, another 2 minutes.
Remove from the pan and serve.
BROCCOLI AND CHEDDAR CHEESE SOUP
Prep time: 20 minutes
Cooking time: 20 minutes
Yields: 8 servings
8 cups broccoli florets (divide into two)
1/2 cup water
1/2 cup cornstarch
garlic salt and ground pepper
1/2 cup all purpose flour
cooking oil
4 cups chicken broth
1 can cream of chicken
1 can evaporated milk
8 oz diced cheddar cheese
ground pepper
Combine 4 cups of broccoli with cornstarch, water and season with salt and pepper.
Add flour and mix well.
Pre heat cooking oil to 350 F.
Fry broccoli in batches until golden brown (2 minutes each side.)
Place in a plate lined with paper towels to remove excess oil.
Bring broth and cream of chicken and cook for 10 minutes
Add cheese and milk.
Season with ground pepper
Cook for 2 minutes.
Adjust heat to medium to low
Add the other 2 cups of broccoli to the pot.
Simmer for 2 minutes
Turn off heat.
Add fried broccoli before serving to retain its crispiness (texture).
Sprinkle grated parmesan cheese before serving.
