BIBINGKANG GALAPONG
Prep time: 10 minutes
Cooking time: 20 minutes
Serves: 6 to 8 with coffee
DRY INGREDIENTS (THIS IS WHAT I HAD INSIDE THE PLASTIC BAG)
1 cup glutinous rice flour
2 cups rice flour
2 tsp baking powder
Pinch of salt
WET INGREDIENTS
6 beaten
8 tbsp melted butter
1 cup sugar
2 cups water
2 salted eggs, peeled and sliced
grated fresh coconut
Combine dry ingredients
Add eggs and butter
Slowly whisk in water until smooth batter
Place banana leaves in 6 inch diameter skillet
Line with banana leaves
Coat leaves with cooking spray
Divide batter into 2 (there’s a left over)
Place sliced salted eggs on top
Pre heat oven to 450 F.
Bake between 15 to 18 minutes until brown on top and set.
Remove.
Brush with melted butter
Sprinkle sugar
Add grated coconut on top.
Slice and serve.
