BIBINGKA PANCAKES (UBE AND REGULAR)
A
2 cups rice flour
1 cup glutinous rice flour
1/2 cup sugar
2 tbsp baking powder
B
4 tbsp melted butter
2 beaten eggs
1 tsp vanilla essence
1 can coconut milk
1 cup grated cheddar cheese
C.
Ube flavor
grated coconut
Combine A and B.
Divide into two
Add ube flavor in one portion.
Makes 6 thick pancakes.
Cook for total 3 minutes over medium heat each.
Coat pan with cooking spray.
Serve with grated coconut.
