Prep time: 10 minutes
Cooking time: 1 1/2 minutes per pancake/bibingka
Yields: 10 to 12 pcs
2 cups rice flour
3 1/2 tsp baking powder
1/2 cup sugar
1 can coconut milk 13.5 oz
4 tbsp melted butter
Combine all the ingredients and make sure it is smooth.
pre heat a saute pan.
Coat with cooking spray.
Ladle 1/3 cup of batter into a the pan and cook between 1 to 1/2 minutes.
When bubbles start to appear, flip it over to cook the other side between 5 to 7 seconds.
Transfer into a plate.
Repeat the process and stack pancakes on top of each other when cooked.
Sprinkle sugar, brush with melted butter, add grated cheese and shredded coconut on top before serving.
