SISTER MARIFE’S BEEF GINILING WITH CORNED BEEF
Prep time: 30 minutes
Cooking time: 20 minutes
yeilds: Serves 20 people (Cooking for the church members)
6 tbsp cooking oil
4 lbs ground beef
2 cans corned beef
2 tbsp Knorr Liquid seasoning
2 tbsp ground pepper
1 large onion, peeled and chopped
10 clove garlic, chopped
2 large potatoes, peeled and diced
2 large carrots, peeled and diced.
5 pcs dried bay leaves
1 small can tomato sauce
2 tbsp tomato paste
4 cups broth
1 chicken cube
1 red bell pepper, seeded and diced
1 can baby corn, brine removed
1 can pre cooked quail eggs
1 cup or more canned corn
1 cup raisins
1 cup frozen peas
Pre heat oil for a minute.
Fry ground beef for 10 minutes until brown.
Season with Knorr and ground pepper.
Add corned beef and continue to cook for 5 minutes until brown.
Set aside.
Meanwhile – pre heat another 6 tbsp of cooking oil.
Add and saute onions for 2 minutes and add garlic and cook for 30 seconds.
Add potatoes and cook for 2 minutes.
Add carrots and cook for another minute.
Add the oyster sauce, soy sauce, chicken broth and chicken cubes.
Add bay leaves.
Cover and bring to a boil (cook for 3 minutes)
Add tomato sauce, tomato paste – add more broth if preferred.
Cover and cook for a minute or until it boils.
Uncover and add the following:
red bell pepper, baby corn, corn, raisins,, quail eggs and green peas.
Cook for 2 minutes then add pre cooked ground beef and corned beef.
Cover and turn off heat and allow to cook for 2 minutes using carry over heat.
Serve with steamed rice.
Feel free to add more vegetables if preferred.
