Baked BIBINGKA GALAPONG
1/2 cup glutinous rice flour
1 cup rice flour
2 tsp baking powder
Pinch of salt
4 beaten eggs
3 tbsp melted butter
1 cup sugar
1 can coconut milk
1 tsp vanilla extract
Combine all ingredients in a mixing bowl until smooth. Pour into a pan coated with cooking spray or melted butter. I prefer you also use banana leaves coated with cooking spray or melted butter before you bake it.
375 F – 25 minutes.
10 minutes into the baking, remove bibingka from the oven then scatter the chopped salted eggs. Put back bibingka back into the oven and bake for another 15 minutes.
Drizzle melted butter (3 tbsp) then add grated cheese (Parmesan or cheddar) on top.
Slice and serve.
(Sorry guys I don’t have an access to fresh coconut/niyog) otherwise I will be ecstatic to use it. ( I am based in the US kaya challenging minsan.
