APPLE AND CINNAMON CREPE
Prep time: 30 minutes
Cooking time: 10 minutes
Yields: 6 to 8 crepes
APPLE FILLING
4 to 6 pcs green apples, wash and diced small
Juice of 1 lemon
3 tbsp butter
1 cup brown sugar
a pinch of salt
1 tbsp vanilla extract
1/2 cup water
2 tbsp lemon juice
1 tsp cinnamon powder
1 tbsp cornstarch
3 tbsp water
CREPES
1 cup all purpose flour
1 cup milk (fresh)
3 tbsp melted butter
2 eggs, beaten
Cooking spray
Soak diced apples in cold water and lemon juice to prevent from oxidation while working on he rest of the ingredients.
Meanwhile melt butter in a pan then add sugar.
Cook to dissolve sugar.
Season with sal, vanilla and add water, lemon juice.
Cook for a minute over medium heat.
Add apples (without the water)
Add cinnamon.
Meanwhile, make a slurry or thickener by combining cornstarch with 3 tbsp water.
Cook apples for 5 minutes over minute until soft.
Then add slurry..
Turn heat to low and combine well.
Turn off heat and cool down completely.
Transfer to a bowl and set aside.
CREPE MAKING
combine flour, milk, eggs and butter
whisk until smooth.
Pre heat a pan and coat with cooking spray.
Ladle 1 1/2 of batter to the pan.
Cook for 30 seconds and turn it over to cook the other side.
Cool down crepes then place a good amount of the apples on it.
Wrap and roll.
dust with powdered sugar before serving.
