PORK ABOBONG PUTI
Prep time: 20 minutes
Cooking time: 30 to 45 minutes
Yields:4 to 6 servings with steamed rice
4 tbsp cooking oil
1 large onion, peeled and chopped
10 cloves garlic, minced
2 to 3 lbs combination of lean and belly (pork) cut into large pieces
3 tbsp fish sauce or more (if you want saltier)
1 tsp ground pepper
1/4 cup palm vinegar
1 to 2 cups or water or more depending on how tender you want the pork
Pre heat cooking oil
Saute onions for a minute
then add garlic and cook for 30 seconds.
Add pork. Add fish sauce, ground pepper.
Brown pork between 3 to 5 minutes
then add vinegar, add salt do not stir and cook for 3 minutes until vinegar boils off.
Add water
Keep on adding water if the pork is not tender yet.
I cook my pork adobo for 25 minutes and ended up using 2 cups of water.
At the end, it produced gravy like fat from the pork which is what i want.
Serve with steamed rice.
