THREE-CHEESE BAKED PENNE PASTA
Prep time: 20 minutes
Cooking time: 10 minutes stove
Baking time: 15 minutes
yields: 8 servings
6 oz penne pasta cooked according to package instructions.
3 tbsp olive oil
12 oz ground beef
1 medium size onion, peeled and chopped (2 oz)
8 oz (video says 6) chopped tomatoes (i removed the seeds)
5 cloves garlic, minced
1 tbsp dried oregano
1/2 tsp salt
1/2 tsp ground pepper
1 cup grated mozarella cheese
1/2 cup grated cheddar cheese
1/2 cup parmesan cheese
Heat olive oil for a minute.
Add beef and cook until brown – 5 minutes
Remove.
Remove the oil from the pan and leave 3 tbsp only.
Add onions and cook for a minute.
Add tomatoes, stir and cover and cook for a minute or untl wilted and soft.
Add garlic and cook for 30 seconds.
Add back the ground beef
Add oregano, salt and pepper.
Add pasta and 4 tbsp pasta water.
Add mozarella and cheddar cheese.
Combine well.
Meanwhile, grease a square baking dish with oil.
Add beef and pasta.
Flatten top
Sprinkle parmesan and more mozarella if desired (I added 3 tbsp of mozarella cheese on top)
Bake at 350 f for 15 minutes or until brown and bubbly.
Cool down and serve.
